Ingredients For Lemon Rice Recipe

  • 2 cups cooked rice (cooled or leftover rice works best)
  • 2 tbsp oil (preferably coconut or any neutral oil)
  • 1 medium size onion sliced
  • 1 tsp mustard seeds
  • 1 tsp urad dal (optional)
  • 1 tbsp chana dal
  • 1–2 dried red chilies
  • 8–10 curry leaves
  • 2 tbsp peanuts or cashews
  • A pinch of asafoetida (hing)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2–3 tbsp fresh lemon juice
  • Fresh coriander leaves for garnish (optional)

Step By Step Lemon Rice Recipe

1. Prepare the rice:

Use freshly cooked or leftover rice. If using leftover rice, warm it slightly. Freshly cooked rice should also be warm but not too hot. Fluff the rice gently to remove any lumps.

2. Make the tempering:

Heat oil in a pan. Add mustard seeds and let them sputter. Add dry red chilies, chopped onion, and curry leaves. Saute for a minute until the onions turn soft.  Now add urad dal, chana dal, and peanuts or cashews. Saute until the dals turn golden and the peanuts are roasted.

3. Add turmeric and mix:

Add turmeric powder and give it a quick stir.

4. Add lemon juice and rice

  • Turn off the heat and then add the lemon juice and salt. Mix well. Avoid adding lemon juice while the pan is still on the heat, as cooking it can give the dish a slightly bitter taste.
  • Now add the cooked rice. Mix gently to coat the rice evenly with the spices.
  • Note: If using cold or leftover rice(not warmed up), add it to the pan first and let it warm up for a couple of minutes. Once the rice is warm, turn off the heat and add the lemon juice.
