Boondi Raita is a refreshing and creamy Indian yogurt side dish made with crispy fried boondi (tiny gram flour balls) soaked in spiced curd. It’s a perfect cooling accompaniment to biryani, pulao, or any Indian meal.

For Raita

  • 1 cup curd (yogurt), whisked
  • 1/2 cup boondi (store-bought or homemade)
  • 1/4 to 1/2 cup water (as needed to adjust consistency)
  • 1/2 tsp roasted cumin powder
  • 1/4 tsp red chili powder
  • 1/2 tsp black salt (or regular salt, to taste)
  • Fresh coriander leaves, chopped (for garnish)

For Tempering (Tadka) optional

  • 1 tbsp oil

  • 1 strand of curry leaves

  • 1/4 tbsp red chili powder

  • 1 dry red chili

Step By Step Guide For Boondi Raita Recipe

1. Soak Boondi:

Soak the boondi in warm water for 5–7 minutes until soft. Then gently squeeze out the water and keep aside.

2. Prepare Curd:

In a mixing bowl, whisk the curd until smooth. Add a little water to reach your desired raita consistency.

3. Add Spices:

Mix in roasted cumin powder, red chili powder and black salt. Stir well.

4. Combine:

Add the soaked boondi and mix gently.

5.Prepare the Tadka:

Heat oil in a small pan. Add curry leaves and dry red chilli. Once they start to splutter, lower the heat and add red chilli powder. Immediately pour this sizzling tadka over the raita.

6.Garnish and Serve:

Garnish with chopped coriander leaves and a pinch of cumin powder. Serve chilled.

  • For a crunchy version, add dry boondi directly without soaking, just before serving.
  • You can add finely chopped onions or mint for extra flavor.
  • Use thick curd for a creamier texture.
